This recipe for Easy Slow Cooker London Broil with Onion Soup Mix and Beer is a great way to serve a super tasty meal right out of your Crockpot. We used a London broil roast for this recipe but you can also substitute chuck. Either way, the meat comes out tender and juicy and full of flavor.

  • Beef roast - we used a London broil roast but chuck works just a well.
  • Thyme and Rosemary - aeromatics like this pair so well with rich flavorful meat dishes
  • Onion - onions provide tons of flavor as the beef stew slow cooks throughout the day
  • Garlic - fresh garlic is best. Our local kosher meat market has been selling pre-peeled garlic and I love it!
  • Onion soup mix - use your favorite mix. most of the seasoning for the stew is locked in the bag of soup mix. You can also substitute in our Easy Pot Roast Seasoning Recipe.
  • Potatoes - adds body and starch to make this stew a meal
  • Carrots - for color and a root vegetable flavor
  • Beer - we used a good dark beer for an earthy deep flavor
  • Salt and black pepper

  • Easy to prepare - Crockpot London broil is easy because it is a one pot recipe. Toss the ingredients into the slow cooker and set the timer. That's it!
  • Great for any time of year - slow cooker stews are most commonly eaten during the colder months but this recipe is also great as the main course for a Shabbat lunch or an easy weeknight meal.
  • Made using fresh ingredients - fresher is always better and this recipe is best with fresh garlic and onions.
  • Simple to make - set the timer and let the slow cooker do the work. Cook low and slow throughout the day without any maintenance.

How to make Easy Slow Cooker London Broil with Onion Soup Mix and Beer

Step 1 - prepare the ingredients for the slow cooker

Chop the onion, potatoes, and carrots. Don't mince or they could fall apart during the long cook.

Step 2 - Add ingredients into the slow cooker

Put the potatoes, onion, garlic, and carrots at the bottom of the Crockpot. Add the water, beer, salt, black pepper, and onion soup mix. Next, lay the London broil roast on top. Finally, place the rosemary and thyme into the liquid to ensure that the flavors are fully incorporated into the gravy.

Step 3 - Cook

Cook on low for 7 hours (or on high for 3-4 hours).

Step 4 - Serve

When the roast is done, there will be a lot of liquid remaining; don't discard it. Remove the meat, potatoes, onions, and carrots and use the remaining liquid as gravy as desired.

  • Part of what makes the roast stay moist and juicy is the amount of liquid in the Crockpot as the cook happens. Don't discard those juices, they are full of flavor. Spoon it over the meat as a gravy. If you don't like thin gravy, add a cornstarch slurry to thicken it up.
  • The roast is moist and tender on its own but you can turn this recipe into a beef stew by cutting the meat in to cubes after it is cooked. London broil doesn't fall to pieces the same way chuck can so it will keep its shape when sliced.

How do you cook London broil so it is not so tough?

Low and slow is the way to do it. A long cook at low temperature gives the intramuscular tissue and fat some time to break down. When it does, you have a tender and juicy roast.

Do you need to Marinate London broil before cooking?

Should I sear my London broil before cooking?

This recipe infuses flavor over a long period of time but searing a London broil roast can help to infuse flavor quickly. We suggest coating the roast with salt and pepper before searing. Then, sear on all edges for about 2 minutes per edge.

  • 4-5 lbs roast london broil or chuck

Instructions

  • Chop onion, carrots, and potatoes and place them at the bottom of the slow cooker along with the garlic.
