Squash are an underrated vegetable. There, I said it. I think that a lot of people simply do not know what to do with squash and just pass it over in the grocery store. That stops here! We love this recipe for Easy Oven Baked Spaghetti Squash because it is:
- Easy to make. If you can cook spaghetti in a pot you can make it in the oven. Roast a squash instead of boiling noodles. Add sauce and cheese. So easy.
- Only 3 ingredients. Squash, a jar of tomato sauce, and cheese. A delicious and healthy meal.
- Ready in under an hour. The bulk of the time this recipe takes to prepare is roasting the squash in the oven for 50 minutes. Other than that, prep time takes about 5 minutes.
- A healthy dinner or lunch. Squash are super healthy vegetables, they contain fiber, protein, vitamin C, vitamin B6, and are low in fat and calories.
- Kosher for Passover. On Passover, we eat a lot of recipes like our Matzo Pudding or Passover Macaroni and Cheese and it is nice to have a vegetable based meal to change things up.
How to Make Easy Oven Baked Spaghetti Squash step by step
Step 1 - Prepare the squash
Slice the squash in half lengthwise on a cutting board. Then take a spoon and scoop out all of the seeds. Rub with olive oil and season with salt and pepper. Preheat oven to 400ºF.
Step 2 - Roast in the oven
Roast the spaghetti squash in a 9x13 banking pan uncovered for 50 minutes at 400ºF. The squash should be golden brown when you take it out. There will be some liquid collecting in the bottom of the squash. You can just mix it in after the squash is shredded in the next step.
Step 3 - Create the spaghetti strands.
No fancy tools here. Take a regular kitchen fork and run it from the edge of the spaghetti squash to the middle. As you pull the fork away from the edges, the squash will separate and form into spaghetti like strands. Do this around the entire circumference of the squash. Leave about ¼ inch of squash untouched around the edges or it may collapse.
Step 4 - Mix in the sauce and cook
Mix the pasta sauce with the squash "noodles" right in the squash shells. You can use your favorite pasta sauce for this. Be careful not to hit the sides of the squash while you do this, you don't want to damage the shell. If you like, you can always take the shredded squash and mix it with the past a sauce in a separate bowl and then spoon it back in. Either way, tons of cheese is going on top. We still had some mozzarella cheese cubes left from a KiwiKids box and used those. You can also use shredded mozzarella.
Step 5 - Melt the cheese.
Put the 9x13 pan of squash and sauce back into the oven to keep cooking for 5 minutes to melt the cheese. You can use the broiler for this to get a nice cheese melt over the top.

Easy Oven Baked Spaghetti Squash

Ingredients
- 1 spaghetti squash
- 18 oz pasta sauce
- 10 oz mozzarella cheese
- 2 teaspoon salt
- 1 teaspoon black pepper

Instructions
- Preheat the oven to 400ºF
