Ingredients Needed for No Flour Passover Brownies
We like to keep the ingredients simple for our Passover Dessert recipes. There is already enough to worry about that you don't need more recipes with hard to find ingredients. You only need six ingredients to make these super delicious brownies:
- Unsweetened Hershey cocoa powder - this is the base of the chocolate brownie.
- Chocolate chips - gives the gluten free brownie its gooey insides and intense chocolate flavor. Just like our recipe for Chocolate Puffed Quinoa Crisps, you can use pareve or dairy chocolate chips.
- Potato starch - helps to keep the brownie together instead of almond flour. Using the starch instead of flour also makes the brownie a little bit lighter.
- White granulated sugar - for sweetness.
- Oil - this recipe uses safflower oil instead of coconut oil or ¼ cup butter.
- Eggs - binder for the other ingredients and also adds fluffiness to the recipe.
We Love This Recipe Because It Is...
- Dairy free - Most of the festive Passover meals are meat meals like The Best Oven Slow Cooked Brisket, Whole Roast Chicken and Quick Passover Chicken Marsala. This is the perfect pareve dessert.
- Gluten free - on Passover we cannot eat leaven (or chometz) so we don't use regular flour. That means that flourless recipes like this one are naturally gluten free!
- Only uses 6 ingredients
- Easy to make - this is as close to a one pan recipe as you will get for a fudgy gooey Passover dessert. Just follow the simple steps below:
How to make the Best Passover Brownies Recipe step by step
Step 1 - Make the flourless brownie batter.
Add the eggs and oil into a mixing bowl. Beat eggs with a whisk until completely combined.
Next add the sugar, cocoa powder, and potato starch and whisk again until the dry ingredients are incorporated.
Finally, add the semi sweet chocolate chips and chopped nuts (optional) and stir until the chocolate chips are evenly disbursed.
Step 2 - Bake the brownies.
Pour the gluten free brownie batter into a pregreased 9x13 inch baking pan or baking dish and bake for 25 minutes at 350ºF. Cool completely in the baking dish (and not on a wire rack) before serving. Cut into 2-3 inch squares to serve.
Recipe Pro Tip
After 25 minutes, check to see if the brownies are done by inserting a toothpick into the center. You want some of the batter to come off onto the toothpick but you don't want it to be liquidy. Check for a thick chocolate pudding consistency and not raw batter.
Recipe FAQ
These will freeze well meaning that you can make them in advance and thaw them when you are ready to serve them? Just in case you forget and keep them past Passover they taste great at any time of the year!
Potato starch is a potato derivative that is used to provide texture and not flavor. These brownies will not taste like a potato.
Yes they are. The amount of chocolate chips and oil in this recipe make the brownies have a fudgy texture. You can make the brownies even fudgier by ending the baking time closer to 20 minutes. Ending the baking time closer to 25 minutes will yield a cakier brownie.
According to the Star-K Passover guide, all United States domestically produced cocoa powder does not need special supervision. This means that Hershey's Cocoa can be used for Passover without any special Passover kashrus certification.

They are included in the ingredients but not in the recipe itself!

Add them at the end of step 1.
