The Best Banana Muffins with Almond Flour are a super tasty addition to our growing collection of gluten free kosher for passover muffins. These muffins are moist and nutritious and make a great breakfast or snack on Passover. Plus, these Passover Muffins are pareve and dairy free!

One of the biggest questions we get on Passover is what to have for breakfast. It seems like everybody has figured out matzo and cream cheese by now and are looking for something different. We are a big fan of muffins like our Pumpkin Muffins with Almond Flour and this recipe for Almond Flour Banana Muffins because they are super simple to make and are somewhat nutritious.

Ingredients

  • Banana - provides the moisture and tons of flavor to the muffin. Bananas are also really healthy, just check out the health benefits of bananas.
  • Almond flour - the gluten free base of the recipe. Almond flour recipes are used as a substitute for wheat flour during Passover when we avoid chometz and leaven.
  • Eggs - binder that holds the Passover muffins together.
  • Lemon juice - add a touch of tartness to the muffins.
  • Honey - a natural sweetner.
  • Baking soda - this helps the muffins during baking.
  • Salt - helps the muffins during baking.
  • Chocolate chips - adds tons of flavor but can be left out if you are trying to eliminate some of the sugar in this recipe.
  • Vanilla extract - adds depth of flavor.

Instructions on how to make Almond Flour Muffins with Banana

Step 1 - Prepare the batter

Beat the eggs, vanilla, salt, baking soda, lemon juice, and honey together in a large mixing bowl with a whisk.

Mash the bananas and mix into the egg mixture. You can actually just mash them right into the beaten egg mixture. We used a separate bowl here for demonstration purposes.

Whisk in the almond flour and chocolate chips. Passover Almond Flour Muffin batter is done!

Step 2 - Bake

Spoon the muffin batter into the lined muffin cups until they are about ¾ full.

Bake for 22 minutes at 350ºF or until they are golden brown on the top and firm in the middle.

Cool for at least 15 minutes before serving.

Banana Muffins with Almond Flour Recipe Variations

  • Healthy Almond Flour Banana Nut Muffins - add ¼ cup of walnuts or pecans into the batter in Step 1 of the recipe.
  • Maple Banana Passover Muffins - instead of the honey, use maple syrup in the batter.
