Why This Recipe Works
In our house we are always searching for ways to make easy lunches. Thankfully, the KiwiKids boxes have made that process a lot easier. Here is why we like this recipe so much, Quick and Easy Cheese Quesadilla are:
- Easy to make. If you can throw together a grilled cheese you can make a Quesadilla. This recipe does not require a whole lot more skill than that. Just like our recipe for Cheesy Ramen Noodles, this one is really low maintenance.
- Only 3 ingredients. Butter, flour tortillas, cheese. Yay!
- Ready in under 10 minutes. Most of the time spent making your quesadilla will be waiting for the pan to heat up. Don't rush it as heat that is too low or too high will ruin the recipe.
- Sooooo versatile. This recipe has so much great flavor by itself and is great plain in a pinch. The fun and flavor of Cheese Quesadillas are really all in the toppings and serving suggestions we discuss below.
How to make a Cheese Quesadilla step by step:
Step 1: Heat the skillet.
Melt the butter in a non-stick skillet over medium heat. Make sure that the heat stays this low or the butter and the quesadilla will burn.
Step 2: Fry the tortilla and top with cheese.
Once the butter has melted (about 2-3 minutes) place one tortilla into skillet and top with the cheese of your choice. We like the shredded cheese from the bags for this but you can also use slices of cheese evenly spaced.
Step 3: Add the second tortilla.
As the cheese begins to melt, add the second tortilla to the top.
Step 4: Flip.
About 1 minute after adding the top tortilla, use a spatula and flip. Let it cook for another 1-2 minutes to let the other side crisp up. Both sides should now be that delicious looking golden brown. Cut with a pizza slicer or knife and serve. Be careful, the cheese inside will be very hot.
Recipe FAQ
We used flour tortillas in this recipe but corn tortillas can work as well. Just be aware that the flavor will be different and the corn tortilla will not crisp up as much as the flour tortilla.
Serving suggestions
Often times, Quick and Easy Cheese Quesadillas are a go to lunch. They are easy to make and pack right before the kids leave for school. The school lunch quesadilla is a very low frills version of this recipe. When you have time to really savor the experience, here are some of our favorite ways to enjoy Cheese Quesadillas:
- Sour cream and salsa. Traditionally, quesadillas are served with a dollop of sour cream and a side of salsa.
- Guacamole. Fresh or store bought guacamole is always a welcome addition to our quesadilla platters.
- Green chilis or jalapenos. What would a Tex-Mex recipe be without adding green chilis or jalapenos. Pick your favorite spicy pepper and go with it as a topping or filling.
- Dip into our Copycat Taco Bell Creamy Jalapeno Sauce.
- Seafood quesadilla. Chop up 2-3 of the fake crab sticks that you can find at most kosher grocery stores and add them to the bottom tortilla along with the cheese.
- Tuna melt quesadilla. Put a new spin on the classic tuna melt by adding ½ cup of tuna salad in with the cheese.
- Vegetarian Beef Crumblers. Mix ½ cup of meatless crumblers and ½ teaspoon cumin in with the cheese.
- With rice. Our recipe for Authentic Spanish Rice is a perfect side dish for quesadillas.
- Experiment with different cheeses. Cheddar and mozzarella work great but so do Monterey jack, pepper jack, muenster, havarti. You can also find Mexican cheese and pizza cheese blends in most kosher grocery stores.
- Extra crispy. Once the butter has melted, put a layer of cheese down across the surface of the pan. Wait until the cheese starts to melt and then put the first tortilla down. This creates a layer of crispy fried cheese on one of the tortillas. This one is a family favorite!

Quick and Easy Cheese Quesadilla

- 2 flour tortillas medium or large
- ½ cup shredded cheese
- 1 tablespoon butter
Instructions
- Melt butter in a skillet over a medium/low flame.
