This kosher for Passover recipe for the Matzo Grinder is our take on the familiar hot oven baked sandwich known as a grinder. The Matzo Grinder is stuffed with mushrooms, spinach, cheese, and alfredo sauce and is truly a unique Passover Recipe experience.

On Passover we can't eat chometz or leaven. So what! That just means that we have to get creative with our recipes. These restrictions have helped us come up with recipes like our Gluten Free Passover Chocolate Chip Cookies and Sweet Matzo Kugel. But when you are craving a hearty sandwich, it isn't enough to spread some cream cheese on a piece of matzo; you need the Matzo Grinder!

Ingredients in the Matzo Grinder
Just like any other sandwich recipe, the quality and taste of the Matzo Grinder is all about the ingredients. Here is what you need:
- Matzo - in place of bread.
- Shredded cheese - we used a preshredded cheese blend but you can also shred it youself.
- Alfredo sauce - we used our recipe for Authentic Alfredo Sauce. Since this is a Passover recipe, you may not be able to find store bought alfredo sauce so you will likely have to make your own.
- Mushrooms - fresh crimini are best but canned work as well.
- Spinach - fresh baby spinach.
- Tuscanini Hot Calabrese Peppers - We were given a sample jar of a these hot peppers. This is not a paid recipe post and all opinions about these peppers are our own. They are a great way to add some heat and which helps to cut through the richness of the cheese and alfredo sauce.

This is a fun recipe to make for large groups since it is really easy to customize for individual tastes. Use some of our variation suggestions or ask your guests what they like and make individual Matzo Grinders for everyone.
Instructions on How to make the best Matzo Grinder
You are going to need 2 sheet of matzo for this. Lay the first into a baking dish lined with aluminum foil.
Next, pile on the fresh baby spinach, sliced mushrooms, and shredded cheese.
Spread alfredo sauce over the bottom of the top matzo.
Then flip it over so that the sauce layer is on top of the mushrooms and spinach. Finally, add the Tuscanini Hot Calabrese Peppers to the top and sprinkle cheese over the whole thing.
Bake at 400ºF for 10-12 minutes or until the cheese is fully melted.
Let the Matzo Grinder cool for 2-3 minutes before serving. We suggest slicing it down the middle.
Substitutions and Variations
- Leave out the hot peppers - the peppers we use in this recipe are super delicious but they are spicy. Sandwiches like this one love spicy ingredients but you can leave them out if you would like. Substitute red bell peppers.
- Experiment with different cheeses - we used a pizza cheese blend that worked really well but you can try other cheeses like swiss, gouda, and edam. As much as I love feta cheese, I would stay away from that one here is it does not go well with the alfredo sauce.
- Tuna Matzo Grinder - a classic lunch grinder recipe. Leave out the alfredo sauce and mushrooms and substitute tuna salad.
- Pineapple Pizza Matzo Grinder - leave out the alfredo sauce and mushrooms and add pineapple tidbits and marinara sauce instead.

Matzo Grinder
Equipment
- 8x8 baking dish lined with foil
Ingredients
- 2 matzos
- ¾ cup shredded cheese
- ½ cup baby spinach whole
- 2 fresh mushrooms sliced
- 3 tablespoon alfredo sauce
- 3 Tuscanini Hot Calabrese Peppers sliced in half
Instructions
- Preheat oven to 400ºF.
- Lay one matzo flat in a baking dish lined with aluminum foil.
- Add the spinach and mushrooms and ½ cup of shredded cheese to the matzo.
- Spread the alfredo sauce onto the top matzo and place it sauce side down on top of the mushrooms, spinach, and cheese.
- Top with the Tuscanini Hot Calabrese Peppers and the rest of the shredded cheese.
- Bake for 10-12 minutes or until all of the cheese is melted.
- Cool for 2-3 minutes before slicing and serving.
