Sweet potatoes are one of my favorite vegetables and if you haven't fallen in love with them yet, here are some reasons why you try this recipe for sweet potato soup:

  • A soup with sweet potatoes is full of fiber. Fiber is essential for digestion and well-being of your gut and digestive tract. Most American diets are low on fiber and sweet potatoes are a delicious way to add more fiber into your day.
  • Tons of vitamin A in the form of beta carotene. Vitamin A can help your body ward off infections, may reduce your risk of certain cancers, and is essential for maintaining a healthy reproductive system amongst other things.
  • Soups with sweet potatoes are a good source of magnesium. This is an essential mineral for body functioning. One of the most important benefits of magnesium is it helps reduce stress, anxiety, and depression in your body. Sufficient magnesium intake has been shown to reduce insomnia as well.
  • Sweet potato soups are rich in Vitamin C and Vitamin E which are excellent in the promotion of collagen for good skin and hair growth.

Carrots are also a fantastic vegetable for their fiber, vitamin K1, potassium and antioxidants. It is true what they say about carrots helping your eyesight, night vision specifically, thanks to all that beta carotene.

Onions are unsung heroes. I love onions! Though they can be spicy when eaten raw, once cooked, onions take on a mild to sweet taste. Caramelized onions improve just about any food but for this quick and easy sweet potato soup recipe just boiling the onion is all it takes to reap all its nutritional benefits.

  • Onions are low in calories but high in vitamins and minerals such as vitamin C and B vitamins.
  • Good source of potassium, a mineral which many people are lacking. Potassium is responsible for normal cellular function, nerve transmission, fluid balance, and muscle contractions. If you suffer muscle cramps extra potassium can often help alleviate the problem.
  • Onions are full of antioxidants and compounds that can help fight inflammation, help reduce high blood pressure, decrease cholesterol, and protect against blood clots.

Health Benefits of Curry Powder

Lastly, curry powder, while "just" a spice blend is a host for a ton of beneficial properties for your body. The spices used to create curry powder provide benefits such as:

  • reducing inflammation
  • fighting cancer
  • combating Alzheimer's disease
  • increasing bone health
  • and increasing cardiovascular health, to name a few.

So, while quick and easy, this sweet potato soup recipe contains a bounty of health benefits as well as being delicious and simple to make.

Changes and Substitutions

  • If you don't like spicy food and are nervous about using curry powder, you can start off with a very little bit, like ½ or 1 teaspoon, which will give the soup a delicious flavor but should not make the soup spicy. If you are still leary you can certainly leave the curry powder out and you will still have a tasty soup.
  • If you would rather not use soup powders you can use any vegetable broth, beef stock, or chicken stock you prefer. Use the stock in place of the water in the ingredients. This simple sweet potato soup recipe is very versatile and will easily adapt to any alterations.
  • As written, this soup recipe comes out as more of a puree. if you prefer a thinner soup all that is needed is to add more water or stock and then adjust the seasonings to taste.
  • Try using butternut squash instead of sweet potato. Drizzle with olive oil and roast in an oven at 375ºF for an hour with before making it into soup.

Helpful Hints When Making Sweet Potato Soup

  • When blending the soup, be certain to turn off the immersion blender before lifting it out of the soup or you risk spraying your kitchen with your delicious soup.
  • This soup can be made ahead and stored in the fridge for a few days. It may thicken in the fridge. When reheating you may want thin soup with water, coconut milk, or heavy cream (dairy) to your desired consistency before heating.
  • Reheating sweet potato soup is as simple as pouring into a pot and heating over medium heat until ready. Creamy sweet soup will be ready in not time.
  • Keep warm in a slow cooker until you are read to eat. Perfect for Shabbat or Yom Tov.

Equipment

  • Stock Pot
  • Immersion Blender

Ingredients

  • 4 medium sweet potatoes about 2 pounds sweet potatoes
  • 3 medium carrots
  • 1 large onion
  • 1-2+ teaspoon curry powder
  • 1 tablespoon beef flavor soup powder
  • 1 tablespoon salt
  • ¼ teaspoon pepper

Instructions

  • Roughly chop vegetables and put into 5.5 quart or larger stock pot.
  • Fill with water to cover vegetables.
  • Add curry powder, soup powder, salt, and pepper. (One teaspoon curry powder will give a nice mild flavor, more will start to add heat.) Stir.
  • Bring to boil then reduce heat to a simmer.
  • Simmer for at least 30 minutes or until vegetables are soft.
  • Remove from heat and puree with immersion blender. Take care not to lift immersion blender out of soup while it is turned on. You can also use a blender if you prefer.
  • If soup is too thick you can add more water to desired consistency.
  • Adjust seasoning to taste.
