Easy Slow Cooker London Broil with Onion Soup Mix and Beer
This recipe for Easy Slow Cooker London Broil with Onion Soup Mix and Beer is a great way to serve a super tasty meal right out of your slow cooker. We used a London broil roast for this post but you can also substitute chuck.
Chop onion, carrots, and potatoes and place them at the bottom of the slow cooker along with the garlic.
Add water, dark beer, onion soup mix, salt, and black pepper.
Place the London broil roast on top of the carrots, onions, and potatoes.
Add the rosemary and thyme.
Cook for 7 hours on low.
Remove the London broil and vegetables to serve. Spoon liquid over the top as gravy.
Notes
Part of what makes the roast stay moist and juicy is the amount of liquid in the Crockpot as the cook happens. Don't discard those juices, they are full of flavor. Spoon it over the meat as a gravy. If you don't like thin gravy, add a cornstarch slurry to thicken it up.
The roast is moist and tender on its own but you can turn this recipe into a beef stew by cutting the meat in to cubes after it is cooked. London broil doesn't fall to pieces the same way chuck can so it will keep its shape when sliced.
