Cream the butter until fluffy and add the almond flour, powdered sugar, and vanilla extract.
Wrap the dough in plastic wrap and gently roll into a cylinder. Refrigerate for 1 hour.
Preheat oven to 350ºF
Remove the dough from the refrigerator and cut ¼ inch discs off of the dough. Place them onto the baking sheet lined with parchment paper. Leave at least 1 inch between cookies.
Bake for 10 minutes.
