Instructions
Mix the brown sugar, kosher salt, and black pepper together until fully mixed.
Rub the curing rub over all surfaces of the veal or lamb breast.
Wrap and cure in an air tight container or bag for 7 days.
Remove the meat and soak for 2 hours.
Dry for 24 hours.
Cut slices that are approximately ⅛ inch thick.
