Ingredients

  • 1 onion large
  • 6 carrots
  • 2 potatoes
  • 1 cup pitted prunes
  • 1 sweet potato large
  • ½ cup brown sugar
  • 2 teaspoon cinnamon
  • 1 tablespoon salt
  • ½ teaspoon ground black pepper
  • 2 cups water
  • 2 cups orange juice
  • 5 lbs pickled beef deckle roast

Instructions

  • Preheat oven to 350ºF.
  • Chop the onions, carrots, sweet potato, and potato and add to the baking dish with the prunes.
  • Coat with brown sugar and cinnamon.
  • Pour orange juice and water into the baking dish and place the pickled deckle roast on top.
  • Cover with aluminum foil and bake for 4 hours.
