Ingredients

  • 4 eggs
  • 1 teaspoon lemon juice
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • cup honey
  • 1 teaspoon vanilla extract
  • 2 bananas
  • 2 cups almond flour
  • ½ cup chocolate chips

Instructions

  • Preheat oven to 350ºF.
  • Beat the eggs and then add the lemon juice, baking soda, salt, honey, and vanilla extract. Whisk until combined.
  • Mash the bananas into the egg mixture.
  • Stir in the almond flour and chocolate chips.
  • Spoon the muffin batter into the lined muffin cups of the muffin pan. Fill each one about ¾ full.
  • Bake for 22 minutes or until firm in the middle and brown on top.
  • Cool for 15 minutes before serving.

Notes

  • Healthy Almond Flour Banana Nut Muffins - add ¼ cup of walnuts or pecans into the batter in Step 1 of the recipe.
  • Maple Banana Passover Muffins - instead of the honey, use maple syrup in the batter.
  • When deciding which bananas to use, the blacker the better. As bananas get older, they break down and get sweeter. Just like our Easy Homemade Banana Cake, you should use old bananas if you have them.
    When checking your muffins to see if they are done, use the Toothpick Test
