This kosher for Passover recipe for the Matzo Grinder is our take on the familiar hot oven baked sandwich known as a grinder. The Matzo Grinder is stuffed with mushrooms, spinach, cheese, and alfredo sauce and is truly a unique Passover Recipe experience.
Lay one matzo flat in a baking dish lined with aluminum foil.
Add the spinach and mushrooms and ½ cup of shredded cheese to the matzo.
Spread the alfredo sauce onto the top matzo and place it sauce side down on top of the mushrooms, spinach, and cheese.
Top with the Tuscanini Hot Calabrese Peppers and the rest of the shredded cheese.
Bake for 10-12 minutes or until all of the cheese is melted.
Cool for 2-3 minutes before slicing and serving.
Notes
Substitutions and Variations
Leave out the hot peppers - the peppers we use in this recipe are super delicious but they are spicy. Sandwiches like this one love spicy ingredients but you can leave them out if you would like. Substitute red bell peppers.
Experiment with different cheeses - we used a pizza cheese blend that worked really well but you can try other cheeses like swiss, gouda, and edam. As much as I love feta cheese, I would stay away from that one here is it does not go well with the alfredo sauce.
Tuna Matzo Grinder - a classic lunch grinder recipe. Leave out the alfredo sauce and mushrooms and substitute tuna salad.
Pineapple Pizza Matzo Grinder - leave out the alfredo sauce and mushrooms and add pineapple tidbits and marinara sauce instead.
