Passover Sweet "Noodle" Kugel (Non-Dairy)

This recipe for Passover Sweet "Noodle" Kugel is our version of a traditional Shabbat dish. This recipe uses matzo instead of noodles so that it is kosher for Passover and year round. This recipe is kosher for Passover, dairy-free, pareve, and nut free.

Equipment

  • large mixing bowl
  • 8x8 baking dish

Ingredients

  • ½ cup brown sugar
  • 20 oz can of pineapple tidbits drained
  • 2 eggs
  • ½ cup oil
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • 1 ½ teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 4 matzos broken
  • ½ cup raisins optional

Cinnamon Sugar Topping

  • ½ teaspoon cinnamon
  • 2 tablespoon granulated sugar

Instructions

  • Preheat oven to 350ºF.
  • Break the matzos into quarters and soak in hot water for 3-4 minutes.
  • Beat the eggs and then mix in the oil, brown sugar, granulated white sugar, salt, cinnamon, lemon juice, and pineapple tidbits.
  • Add the broken pieces of matzos and stir gently.
  • In a separate dish, mix the cinnamon and sugar together. Sprinkle the Cinnamon Sugar topping over the top.
  • Transfer to a pregreased 8x8 baking dish and bake for 30-35 minutes.
  • Cool for 20 minutes before serving.
