Equipment

Ingredients

  • 2 eggs
  • 2 cups almond milk
  • 2 tablespoon melted butter
  • 2 tablespoon brandy or amaretto
  • 1 cup matzo meal
  • cup granulated sugar
  • ½ teaspoon salt
  • ¼ cup dried currants
  • 3 tablespoon brown sugar to sprinkle over the top

Instructions

  • Preheat oven to 350ºF.
  • Beat together the eggs, almond milk, brandy, and melted butter in a mixing bowl.
  • Add the matzo meal, sugar, salt, and currants to the wet ingredients and mix until fully incorporated. The batter will be runny.
  • Bake for 25 minutes. Sprinkle brown sugar over the top and bake for an additional 10 minutes or until the sugar melts.

Notes

Pro Tips

  • Do not over bake your Matzo Pudding or the middle will bubble up and crack.
  • Let cool completely before serving.
  • If the sugar is not melting, turn on the broiler for a minute or two. This is will give it a creme brulee kind of flavor.
