Passover Sweet "Noodle" Kugel (Non-Dairy)

This recipe for Passover Sweet "Noodle" Kugel is our version of a traditional Shabbat dish. This recipe uses matzo instead of noodles so that it is kosher for Passover and year round. This recipe is also, dairy-free, pareve, and nut free.

Traditional Ashkenazi Jewish festival meals are not complete without some kind of kugel. Kugels usually include noodles or potato as their base. Most of them cannot be eaten on Passover because they contain chometz or leven. Ingredients in Passover Noodle Kugel

  • Matzo - matzo is the base of the kugel. Since we cannot eat regular noodles during Passover, we get creative and use matzo in place of noodles. For this recipe, we like to use a light matzo and not the whole wheat variety.
  • Brown sugar - provides sweetness and depth.
  • Pineapple - a lot of traditional Shabbat kugels have pineapple and this one is no exception.
  • Eggs - binds the other ingredients together.
  • Oil - helps the Passover Kugel stay moist.
  • Cinnamon - for flavor.
  • Lemon juice - adds just a hint of tartness needed to contrast the other sweet ingredients.

How to make the Best Passover Sweet "Noodle" Kugel step by step

Step 1 - Prepare the matzo "noodles."

Break the matzos into quarters as best you can, you do not have to be exact. Pour hot water over the top and let soak for 3-4 minutes. This will soften up the matzos and give them a noodle like consistency.

Step 2 - Mix the remaining ingredients

In a separate bowl, mix the brown sugar, white sugar, pineapple tidbits, eggs, oil, and salt. Make sure that you beat the eggs before mixing them with the other ingredients.

Mix in the the broken pieces of matzo and transfer to a pregreased 8x8 baking dish.

Make sure the ingredients are well mixed.

Sprinkle the cinnamon and sugar mixture over the top.

Step 2 - Bake

Bake for 35-40 minutes at 350º or until golden brown on top. Let it cool for 20 minutes before serving. So simple yet soooo delicious!

Substitutions for Pineapple in Passover Sweet Matzo Noodle Kugel

This recipe just screams for you to be creative with your favorite kugel ingredients. Try substituting some of these ingredients in for pineapple:

  • Peaches
  • Apples for Apple Matzo Kugel
  • Strawberries
  • Apricots (fresh, not dried)
  • Pecans

  • Large bowl for mixing
  • 8x8 baking dish.

Storage

  • This keeps very well in the refrigerator. Cover the baking dish with plastic wrap and refrigerate for up to 7 days.
  • You can also make Passover Sweet Matzo Kugel in advance and freeze for later. Remove the kugel from the baking dish and double wrap with plastic. Then wrap in aluminum foil and freeze for up to 6 months.

  • ½ cup brown sugar
  • 20 oz can of pineapple tidbits drained
  • 2 eggs
  • ½ cup oil
  • ¼ cup granulated sugar
  • ½ teaspoon salt

  • 1 teaspoon lemon juice
  • 4 matzos broken
  • ½ cup raisins optional

Instructions

  • Preheat oven to 350ºF.
  • Break the matzos into quarters and soak in hot water for 3-4 minutes.
  • Beat the eggs and then mix in the oil, brown sugar, granulated white sugar, salt, cinnamon, lemon juice, and pineapple tidbits.
  • Add the broken pieces of matzos and stir gently.
  • In a separate dish, mix the cinnamon and sugar together. Sprinkle the Cinnamon Sugar topping over the top.
  • Transfer to a pregreased 8x8 baking dish and bake for 30-35 minutes.
  • Cool for 20 minutes before serving.

    Would you need to use 20oz of chopped apples if you were substituting apples for the pineapple. The pineapple was delicious but I would like to change-up the receipe to use latter in the week. Thanks

    Can you provide some guidance on best way to prepare a few days in advance and then reheat?

      You can definitely make the kugel in advance. Reheating depends on whether you are refrigerating or freezing. If you are keeping it in the refrigerator then you can reheat by placing the kugel in the oven covered for about 20 minutes at 275ºF and it should be nice and hot. If you are freezing then I would leave the kugel on the counter for about an hour before reheating at 275ºF for 20 minutes. I hope that helps.
